  • 1 cup cooked meat (ground beef, turkey, or chicken)
  • 1/2 cup cooked rice or quinoa
  • 1/4 cup chopped onions
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional spices (e.g., cumin or red pepper flakes)
  • Optional beans (black or pinto)
  • Optional fresh herbs (chopped cilantro or parsley)
  • Special garnishes such as sour cream, chopped scallions, and fresh lime wedges

  • Instructions

  • Preheat your oven to 375°F (190°C). Roast the chiles until the skin is charred, then place in a plastic bag for about 10 minutes.
  • Remove the skins and slice the chiles open lengthwise to remove the seeds carefully.
  • In a skillet, heat the olive oil over medium heat, then add onions and garlic until translucent. Stir in meat, rice, and 1/2 cup of cheese. Season with salt, pepper, and optional spices.
  • Stuff each chile half with filling and pack well. Place in a baking dish.
  • Sprinkle the remaining cheese over the stuffed chiles.
