12 fresh Hatch green chiles
1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
1 cup cooked meat (ground beef, turkey, or chicken)
1/2 cup cooked rice or quinoa
1/4 cup chopped onions
2 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper to taste
Optional spices (e.g., cumin or red pepper flakes)
Optional beans (black or pinto)
Optional fresh herbs (chopped cilantro or parsley)
Special garnishes such as sour cream, chopped scallions, and fresh lime wedges
Instructions
Preheat your oven to 375°F (190°C). Roast the chiles until the skin is charred, then place in a plastic bag for about 10 minutes.
Remove the skins and slice the chiles open lengthwise to remove the seeds carefully.
In a skillet, heat the olive oil over medium heat, then add onions and garlic until translucent. Stir in meat, rice, and 1/2 cup of cheese. Season with salt, pepper, and optional spices.
Stuff each chile half with filling and pack well. Place in a baking dish.
Sprinkle the remaining cheese over the stuffed chiles.
Bake for 20-25 minutes or until the cheese is melted and bubbly.
