  • Instructions

  • Preheat the oven to 350°F (175°C).
  • In a bowl, mix together the softened butter and sugar until creamy. Then, add the egg and vanilla, mixing until combined.
  • In another bowl, whisk together the flour and baking powder. Gradually add this to the wet mixture, mixing until just combined.
  • Press the dough evenly into the bottom of a 9-inch springform pan.
  • Bake the crust for about 10–12 minutes until lightly golden.
  • While the crust is cooling, beat the cream cheese until smooth and then mix in the granulated sugar.
  • Add the eggs one at a time, mixing well after each addition, then stir in the sour cream and vanilla until smooth.
  • Pour the cheesecake filling over the cooled sugar cookie crust, spreading evenly.
  • Bake the cheesecake for about 50-60 minutes until the edges are set but the center is still jiggly.
  • Turn off the oven, crack the door open, and let the cheesecake cool for about an hour.
