Ingredients
Scale
1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
2 cups cream cheese, softened
1 cup sour cream
¾ cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
2 cups fresh peaches, diced
1 cup mixed berries (strawberries, blueberries, raspberries)
Instructions
Preheat your oven to 325°F (160°C).
In a mixing bowl, combine the graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 8-10 minutes until golden brown.
In a large bowl, beat the softened cream cheese until smooth. Add the sour cream, granulated sugar, and vanilla extract, mixing until well combined. Incorporate the eggs one at a time, mixing gently until just combined.
Fold the diced peaches into the cream cheese mixture, ensuring they are evenly distributed throughout.
Pour the filling over the prepared crust, smoothing the top with a spatula.
Bake the cheesecake in the preheated oven for 45-50 minutes until the center is set but still slightly jiggly.
Allow the cheesecake to cool at room temperature for an hour, then refrigerate for at least 4 hours, preferably overnight, to allow it to fully set.
Just before serving, top the cheesecake with the mixed berries for a stunning presentation.
