- ¼ teaspoon Black Pepper
- 1 small Onion, finely chopped
- 1 cup Sweet Crab Meat
- ¾ cup Buttermilk
- 1 large Egg
- Vegetable Oil (for frying)
- Optional: Red Pepper Flakes, Fresh Herbs, Chopped Jalapeños
- Garnishes: Lemon Zest, Fresh Chives, Spicy Remoulade Sauce
Instructions
- In a mixing bowl, combine the cornmeal, flour, baking powder, salt, and black pepper. Whisk together until well-blended.
- Fold in the chopped onions until evenly distributed throughout the dry mixture.
- In a separate bowl, whisk together the buttermilk and egg. Gradually stir this mixture into the dry ingredients until just combined.
- Gently fold in the sweet crab meat, being careful not to break it apart too much.
- In a deep frying pan, heat about 2 inches of vegetable oil over medium-high heat to about 350°F (175°C).
- Once the oil is hot, use a spoon to drop heaping tablespoons of the batter into the hot oil. Fry in batches.
- Fry for about 3-4 minutes on each side until golden brown and crispy. Transfer to a plate lined with paper towels to drain excess oil.
- Allow to cool slightly, then serve with garnishes and dipping sauces.
