Ingredients

  • ½ cup Flour
  • 2 teaspoons Baking Powder
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • 1 small Onion, finely chopped
  • 1 cup Sweet Crab Meat
  • ¾ cup Buttermilk
  • 1 large Egg
  • Vegetable Oil (for frying)
  • Optional: Red Pepper Flakes, Fresh Herbs, Chopped Jalapeños
  • Garnishes: Lemon Zest, Fresh Chives, Spicy Remoulade Sauce

Instructions

  • In a mixing bowl, combine the cornmeal, flour, baking powder, salt, and black pepper. Whisk together until well-blended.
  • Fold in the chopped onions until evenly distributed throughout the dry mixture.
  • In a separate bowl, whisk together the buttermilk and egg. Gradually stir this mixture into the dry ingredients until just combined.
  • Gently fold in the sweet crab meat, being careful not to break it apart too much.
  • In a deep frying pan, heat about 2 inches of vegetable oil over medium-high heat to about 350°F (175°C).
  • Once the oil is hot, use a spoon to drop heaping tablespoons of the batter into the hot oil. Fry in batches.
  • Fry for about 3-4 minutes on each side until golden brown and crispy. Transfer to a plate lined with paper towels to drain excess oil.
  • Allow to cool slightly, then serve with garnishes and dipping sauces.
