Ingredients

  • 2 medium sweet potatoes (approximately 1.5 pounds), peeled and diced
  • 1 can (15 ounces) of black beans, drained and rinsed
  • 1 cup of corn kernels (fresh, frozen, or canned)
  • 1 bell pepper (red or green), diced
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • Salt and pepper to taste
  • 1 cup of shredded cheese (optional)
  • Olive oil for sautéing

  • Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, heat about 1 tablespoon of olive oil over medium heat. Add the diced onion and bell pepper, and cook until softened, about 5-7 minutes. Stir in minced garlic and continue to sauté for another minute until fragrant.
  • Toss the diced sweet potatoes into the skillet, along with cumin, chili powder, salt, and pepper. Stir well to coat the sweet potatoes with the spices and allow them to cook for approximately 10 minutes, stirring occasionally.
  • In a large mixing bowl, combine the sautéed mixture with the black beans and corn, mixing well.
  • Grease a 9×13 inch baking dish, then pour the mixture into it. Spread it out evenly across the dish.
  • If using cheese, sprinkle it generously over the top of the casserole.
  • Cover the baking dish with foil and bake for 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the sweet potatoes are tender and the cheese is bubbly and golden.
  • Remove from the oven, let it cool slightly, and garnish with fresh cilantro and avocado slices before serving.
