1 large sweet potato (about 1 pound)
1 can (15 oz) black beans
1 medium onion
2 garlic cloves
1 bell pepper (any color)
1 can (14 oz) diced tomatoes
2 cups vegetable broth
1 tablespoon chili powder
1 teaspoon cumin
Salt and pepper to taste
Optional: Diced jalapeño, corn, quinoa or brown rice
Special garnishes: Fresh cilantro, avocado slices, lime wedges
Instructions
Start by prepping your sweet potato. Peel it and cut it into bite-sized cubes.
In a large pot, heat a drizzle of olive oil over medium heat. Toss in diced onion and sauté for about 5 minutes, or until they’re soft and translucent.
Add in minced garlic and diced bell pepper, stirring for 2-3 minutes until fragrant.
Add sweet potato cubes, black beans, diced tomatoes, vegetable broth, chili powder, cumin, salt, and pepper. Stir well.
Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 25-30 minutes.
After the sweet potatoes are tender, taste the chili and adjust seasoning as needed.
