2 cups mashed sweet potatoes
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup vegetable oil
3 large eggs
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/2 cup chopped walnuts or pecans (optional)
Instructions
Preheat your oven to 350°F (175°C). Begin by peeling and boiling two medium sweet potatoes until tender, about 15-20 minutes. Drain and mash until smooth. Let cool.
In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, and vegetable oil. Mix until well combined. Add the eggs one at a time, mixing well after each addition.
In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
