  • Preheat your oven to 350°F (175°C). Begin by peeling and boiling two medium sweet potatoes until tender, about 15-20 minutes. Drain and mash until smooth. Let cool.
  • In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, and vegetable oil. Mix until well combined. Add the eggs one at a time, mixing well after each addition.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  • Gradually add the dry mixture to the wet ingredients. Stir gently until just combined. Be careful not to overmix.
