2–3 large Sweet Potatoes
2 cups Smoked Gouda Cheese, shredded
2 cups Heavy Cream
2 tablespoons Fresh Rosemary, chopped
3 cloves Garlic, minced
Salt and Pepper, to taste
1 tablespoon Olive Oil
Instructions
Preheat your oven to 375°F (190°C).
Peel and slice the sweet potatoes into thin, even rounds—about 1/8 inch thick.
In a mixing bowl, combine the heavy cream, minced garlic, chopped rosemary, and season with salt and pepper.
In a greased baking dish, lay down a layer of sweet potato slices. Pour a bit of the cream mixture over the layer and sprinkle with a portion of the smoked gouda. Repeat this process until all ingredients are used up, finishing with gouda on top.
Drizzle the top layer with olive oil.
Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for another 15-20 minutes, until the top is golden and bubbly.
