Ingredients

  • 23 large Sweet Potatoes
  • 2 cups Smoked Gouda Cheese, shredded
  • 2 cups Heavy Cream
  • 2 tablespoons Fresh Rosemary, chopped
  • 3 cloves Garlic, minced
  • Salt and Pepper, to taste
  • 1 tablespoon Olive Oil

  • Instructions

  • Preheat your oven to 375°F (190°C).
  • Peel and slice the sweet potatoes into thin, even rounds—about 1/8 inch thick.
  • In a mixing bowl, combine the heavy cream, minced garlic, chopped rosemary, and season with salt and pepper.
  • In a greased baking dish, lay down a layer of sweet potato slices. Pour a bit of the cream mixture over the layer and sprinkle with a portion of the smoked gouda. Repeat this process until all ingredients are used up, finishing with gouda on top.
  • Drizzle the top layer with olive oil.
  • Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for another 15-20 minutes, until the top is golden and bubbly.
