2 cups mashed sweet potatoes
3 to 4 cups all-purpose flour
2 tablespoons active dry yeast
1/4 cup sugar
1 teaspoon salt
1/2 cup warm milk
1/4 cup unsalted butter, melted
1 large egg
1 teaspoon cinnamon (optional)
1/2 cup chopped nuts (optional)
1/4 cup raisins or dried cranberries (optional)
Instructions
Prepare the Sweet Potatoes: Peel and chop the sweet potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain and mash until smooth. Allow to cool slightly.
Proof the Yeast: In a small bowl, combine warm milk and sugar. Sprinkle yeast on top and let sit for about 5-10 minutes until frothy.
Make the Dough: In a large mixing bowl, combine mashed sweet potatoes, melted butter, egg, salt, and the frothy yeast mixture. Gradually add flour one cup at a time, mixing until a soft dough forms.
Knead the Dough: Turn the dough onto a lightly floured surface and knead for about 5-7 minutes until smooth and elastic.
First Rise: Place in a greased bowl, cover with a damp cloth, and let it rise in a warm place until doubled in size, about 1-1.5 hours.
Shape the Rolls: Punch down the dough to release air, divide into equal portions, and shape into balls. Place on a greased baking sheet, spacing slightly apart.
Second Rise: Cover the rolls with a damp cloth and let them rise again for about 30-45 minutes until puffed up.
Bake: Preheat the oven to 350°F (175°C). Bake for 20-25 minutes or until golden brown. An inserted toothpick should come out clean.
Cool and Serve: Remove from the oven, brush with melted butter if desired, and cool slightly before serving warm.
