2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter
2 cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
1 cup buttermilk
1 can (15 oz) pumpkin puree
1 cup pecans, chopped
1 cup brown sugar
1 cup corn syrup
Optional spices (ginger, allspice)
Chocolate chips (optional)
Whipped cream (for garnishing)
Toasted pecans (for garnishing)
Cinnamon dust (for garnishing)
Instructions
Preheat your oven to 350°F (175°C) and grease and flour three 8-inch round cake pans.
In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set this aside.
In a large mixing bowl, cream the unsalted butter and granulated sugar together until fluffy for about 3-5 minutes.
Incorporate the eggs one at a time, followed by the vanilla extract, mixing until well combined.
Gradually mix in the dry ingredients and buttermilk, alternating between the two, until just combined.
In a separate bowl, combine pumpkin puree, spices, and sugar for the pumpkin pie filling.
In another bowl, mix together the brown sugar, corn syrup, and chopped pecans for the pecan pie filling.
Pour one-third of the cake batter into the prepared pan, followed by a layer of pumpkin filling and another one-third of the cake batter. Repeat this for the second pan and top with the remaining cake batter.
Bake for about 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
Once cooled, stack the cake layers, alternating between the pecan and pumpkin fillings for alignment.
Frost the outside of the assembled cake with whipped cream, top with toasted pecans, and a sprinkle of cinnamon.
