  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 can (15 oz) pumpkin puree
  • 1 cup pecans, chopped
  • 1 cup brown sugar
  • 1 cup corn syrup
  • Optional spices (ginger, allspice)
  • Chocolate chips (optional)
  • Whipped cream (for garnishing)
  • Toasted pecans (for garnishing)
  • Cinnamon dust (for garnishing)

  • Instructions

  • Preheat your oven to 350°F (175°C) and grease and flour three 8-inch round cake pans.
  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set this aside.
  • In a large mixing bowl, cream the unsalted butter and granulated sugar together until fluffy for about 3-5 minutes.
  • Incorporate the eggs one at a time, followed by the vanilla extract, mixing until well combined.
  • Gradually mix in the dry ingredients and buttermilk, alternating between the two, until just combined.
  • In a separate bowl, combine pumpkin puree, spices, and sugar for the pumpkin pie filling.
  • In another bowl, mix together the brown sugar, corn syrup, and chopped pecans for the pecan pie filling.
  • Pour one-third of the cake batter into the prepared pan, followed by a layer of pumpkin filling and another one-third of the cake batter. Repeat this for the second pan and top with the remaining cake batter.
  • Bake for about 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  • Once cooled, stack the cake layers, alternating between the pecan and pumpkin fillings for alignment.
  • Frost the outside of the assembled cake with whipped cream, top with toasted pecans, and a sprinkle of cinnamon.
