3 ripe bananas (about 1.5 cups mashed)
1/3 cup melted butter
1 teaspoon baking soda
Pinch of salt
3/4 cup sugar
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon ground cinnamon
Optional: 1/2 cup chopped nuts (walnuts or pecans)
Optional: 1/2 cup chocolate chips
Special Garnish: A sprinkle of sugar on top before baking
Instructions
Preheat your oven to 350°F (175°C).
Grease a 4×8 inch loaf pan, or line it with parchment paper.
In a large mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter.
Mix in the baking soda, salt, sugar, egg, and vanilla extract until well blended.
Gently fold in the flour until just incorporated.
In a small bowl, mix the remaining sugar with cinnamon. Pour half of the batter into the prepared pan, sprinkle with half of the cinnamon-sugar mixture. Pour the rest of the batter on top, followed by the remaining cinnamon-sugar mixture. Swirl gently.
Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
Once baked, remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack. Slice and enjoy!
