  • 3 ripe bananas (about 1.5 cups mashed)
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • Optional: 1/2 cup chopped nuts (walnuts or pecans)
  • Optional: 1/2 cup chocolate chips
  • Special Garnish: A sprinkle of sugar on top before baking

  • Instructions

  • Preheat your oven to 350°F (175°C).
  • Grease a 4×8 inch loaf pan, or line it with parchment paper.
  • In a large mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter.
  • Mix in the baking soda, salt, sugar, egg, and vanilla extract until well blended.
  • Gently fold in the flour until just incorporated.
  • In a small bowl, mix the remaining sugar with cinnamon. Pour half of the batter into the prepared pan, sprinkle with half of the cinnamon-sugar mixture. Pour the rest of the batter on top, followed by the remaining cinnamon-sugar mixture. Swirl gently.
  • Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
  • Once baked, remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack. Slice and enjoy!
