2 tablespoons olive oil
1 teaspoon garlic powder
Salt and black pepper to taste
1 jar roasted red peppers (about 12 ounces)
1/2 cup vegetable or chicken broth
1 tablespoon lemon juice
Fresh basil or parsley for garnish
Instructions
Pat the tilapia fillets dry with a paper towel and season both sides with salt, pepper, and garlic powder.
Heat olive oil in a large skillet over medium-high heat. Add tilapia to the pan and cook for about 3-4 minutes per side until golden brown. Remove and set aside.
