6 large onions
4 tablespoons butter
8 cups beef broth
1 cup dry white wine
2 teaspoons fresh thyme
2 bay leaves
1 loaf French baguette
2 cups Gruyère cheese, shredded
¼ cup sherry or port (optional)
2 cloves garlic, minced (optional)
Red pepper flakes (optional)
Chopped parsley for garnish
Black pepper for garnish
Instructions
Caramelize the Onions: In a large pot, melt the butter over medium heat. Add the sliced onions, stirring them to coat. Cook for about 30-40 minutes, stirring occasionally, until they are deeply caramelized and golden brown.
Add Wine: Pour in the dry white wine and scrape any brown bits from the bottom of the pot.
Add Broth: Once the wine has reduced slightly, add the beef broth, thyme, and bay leaves. Bring to a boil, then reduce the heat and let it simmer for 30 minutes.
Prepare the Baguette: Slice the baguette into thick pieces and toast until golden brown.
Prepare the Cheese: Preheat your oven’s broiler in the last few minutes of cooking.
Assemble the Soup: Remove the bay leaves, ladle the soup into ovenproof bowls, top with toasted baguette and cheese.
Broil: Broil for 3-5 minutes until the cheese is bubbly and golden.
Serve: Allow to cool slightly, garnish, and serve.
