  • 1 loaf French baguette
  • 2 cups Gruyère cheese, shredded
  • ¼ cup sherry or port (optional)
  • 2 cloves garlic, minced (optional)
  • Red pepper flakes (optional)
  • Chopped parsley for garnish
  • Black pepper for garnish

  • Instructions

  • Caramelize the Onions: In a large pot, melt the butter over medium heat. Add the sliced onions, stirring them to coat. Cook for about 30-40 minutes, stirring occasionally, until they are deeply caramelized and golden brown.
  • Add Wine: Pour in the dry white wine and scrape any brown bits from the bottom of the pot.
  • Add Broth: Once the wine has reduced slightly, add the beef broth, thyme, and bay leaves. Bring to a boil, then reduce the heat and let it simmer for 30 minutes.
  • Prepare the Baguette: Slice the baguette into thick pieces and toast until golden brown.
  • Prepare the Cheese: Preheat your oven’s broiler in the last few minutes of cooking.
  • Assemble the Soup: Remove the bay leaves, ladle the soup into ovenproof bowls, top with toasted baguette and cheese.
  • Broil: Broil for 3-5 minutes until the cheese is bubbly and golden.
