  • 1/2 cup of unsalted butter, softened
  • 1 large egg
  • 1/2 teaspoon of vanilla extract

  • Instructions

  • Chop fresh pineapple into small pieces. In a medium saucepan over low heat, combine the pineapple, sugar, and cornstarch. Stir until thickened, about 5-7 minutes. Remove from heat and cool.
  • In a large bowl, combine flour, baking powder, and salt. Cream together butter and sugar until light and fluffy. Add egg and vanilla, mixing until well incorporated. Gradually fold in the dry ingredients until crumbly.
  • Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper. Press half of the crumble mixture into the bottom of the dish. Pour cooled pineapple filling over the crumble, spreading out evenly. Crumble remaining mixture over the top.
  • Bake for 30-35 minutes until golden brown and a toothpick comes out clean. Let cool for 10 minutes before cutting into squares.
