  • 1 lb Ground Turkey
  • 1 cup Canned Pumpkin
  • 1 Onion, diced
  • 1 Bell Pepper, diced
  • 3 cloves Garlic, minced
  • 14 oz Canned Diced Tomatoes
  • 1 can Kidney Beans, rinsed and drained
  • 2 cups Chicken Broth
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1 tsp Paprika
  • Salt and Pepper, to taste

  • Instructions

  • In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and bell pepper. Sauté until the onion becomes translucent, about 5 minutes.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Add the ground turkey to the pot. Cook until browned, breaking it up with a spatula, about 6-8 minutes.
  • Once the turkey is cooked through, stir in the canned pumpkin, diced tomatoes, and chicken broth. Mix until well combined.
  • Add the rinsed kidney beans, cumin, chili powder, paprika, salt, and pepper. Stir everything together and bring to a simmer.
  • Let the chili simmer on low heat for about 20-30 minutes. This allows the flavors to meld beautifully. Stir occasionally to prevent sticking.
  • Once done, taste and adjust seasoning as needed. Serve hot with your favorite garnishes.
