1 lb Ground Turkey
1 cup Canned Pumpkin
1 Onion, diced
1 Bell Pepper, diced
3 cloves Garlic, minced
14 oz Canned Diced Tomatoes
1 can Kidney Beans, rinsed and drained
2 cups Chicken Broth
1 tsp Cumin
1 tsp Chili Powder
1 tsp Paprika
Salt and Pepper, to taste
Instructions
In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and bell pepper. Sauté until the onion becomes translucent, about 5 minutes.
Stir in the minced garlic and cook for another minute until fragrant.
Add the ground turkey to the pot. Cook until browned, breaking it up with a spatula, about 6-8 minutes.
Once the turkey is cooked through, stir in the canned pumpkin, diced tomatoes, and chicken broth. Mix until well combined.
Add the rinsed kidney beans, cumin, chili powder, paprika, salt, and pepper. Stir everything together and bring to a simmer.
Let the chili simmer on low heat for about 20-30 minutes. This allows the flavors to meld beautifully. Stir occasionally to prevent sticking.
