3 garlic cloves (minced)
1 can (15 oz) black beans (rinsed and drained)
1 can (15 oz) diced tomatoes (with juices)
2 cups chicken broth
1–2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
Salt and pepper to taste
1 tablespoon olive oil
Optional: 1-2 jalapeños (diced), 1 bell pepper (diced), 1 teaspoon red pepper flakes
Garnishes: Fresh cilantro, chopped green onions, sour cream or Greek yogurt, avocado slices
Instructions
Prepare the sweet potatoes: Peel and dice the sweet potatoes into small, even cubes to ensure they cook evenly.
Cook the turkey: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 2-3 minutes until softened. Then, add the ground turkey, breaking it apart with a spoon. Cook until browned.
