Preheat your oven to 400°F (200°C).Pare and chop the sweet potatoes. Boil in salted water for about 15-20 minutes until tender.Heat olive oil in a large skillet over medium heat. Add diced onion and garlic, and sauté until fragrant and translucent.Add ground turkey and cook until no longer pink, breaking it apart with a wooden spoon.Mix in carrots and peas and let stir for another 3-4 minutes until softened.Pour in chicken broth and sprinkle in thyme, salt, and pepper.
