Ingredients

  • 1 lb ground turkey
  • 2 large sweet potatoes
  • 1 onion
  • 2 cloves garlic
  • 1 cup carrots
  • 1 cup peas
  • 1 cup chicken broth
  • 1 tsp dried thyme
  • ½ tsp salt & pepper
  • 2 tbsp olive oil
  • Optional Additions: Chopped spinach or kale, sprinkle of cheese, splash of Worcestershire sauce
  • Special Garnishes: Fresh parsley or chives, dollop of Greek yogurt

  • Instructions

  • Preheat your oven to 400°F (200°C).
  • Pare and chop the sweet potatoes. Boil in salted water for about 15-20 minutes until tender.
  • Heat olive oil in a large skillet over medium heat. Add diced onion and garlic, and sauté until fragrant and translucent.
  • Add ground turkey and cook until no longer pink, breaking it apart with a wooden spoon.
  • Mix in carrots and peas and let stir for another 3-4 minutes until softened.
  • Pour in chicken broth and sprinkle in thyme, salt, and pepper. Stir well and let simmer for about 5 minutes.
  • Drain and mash the sweet potatoes until creamy.
  • Spread the turkey filling evenly in a baking dish and top with sweet potato mash.
  • Bake for about 25-30 minutes until the top is slightly golden.
  • Let cool for a few minutes before serving with garnish.
