  • Instructions

  • In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté for about 3-4 minutes until they become translucent.
  • Add the diced carrots and minced garlic, cooking for another 2-3 minutes until the garlic is fragrant.
  • Stir in the chickpeas (drained and rinsed), diced tomatoes (with juice), bay leaves, dried thyme, and rosemary. Mix thoroughly.
  • Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 20-25 minutes to let the flavors meld and the carrots soften.
