2 cans chickpeas (15 oz each)
1 medium onion, chopped
2 carrots, diced
3 cloves garlic, minced
6 cups vegetable broth
1 can diced tomatoes (14.5 oz)
2 bay leaves
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 tablespoons olive oil
Salt and pepper, to taste
Juice of 1 lemon

Instructions
In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté for about 3-4 minutes until they become translucent.
Add the diced carrots and minced garlic, cooking for another 2-3 minutes until the garlic is fragrant.
Stir in the chickpeas (drained and rinsed), diced tomatoes (with juice), bay leaves, dried thyme, and rosemary. Mix thoroughly.
Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 20-25 minutes to let the flavors meld and the carrots soften.
After simmering, remove the bay leaves and stir in the lemon juice, followed by salt and pepper to taste. Adjust according to your preference.
