Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 cup heavy cream
  • ¾ cup grated Parmesan cheese
  • Zest and juice of 1 lemon
  • Salt and pepper, to taste
  • Fresh parsley, finely chopped (for garnish)
  • Optional: cherry tomatoes, halved
  • Optional: spinach or arugula
  • Optional: red pepper flakes

  • Instructions

  • Heat the olive oil in a large skillet over medium-high heat.
  • Pat the salmon fillets dry and season generously with salt and pepper.
  • Place the salmon, skin-side down, in the skillet and cook for about 4-5 minutes until crispy. Flip and cook for another 3-4 minutes until done.
  • Remove the salmon and cover with foil to keep warm.
  • In the same skillet, add minced garlic and sauté for 30 seconds. Then pour in the heavy cream and let it simmer gently for a couple of minutes.
  • Gradually whisk in the grated Parmesan cheese until melted. Add lemon zest and juice and adjust seasoning.
  • Reintroduce the salmon to the skillet, spooning sauce over the top for a minute.
  • Plate the salmon, drizzle with more sauce, and garnish with fresh parsley.
