1 cup of brown sugar (packed)
1/2 cup of granulated sugar
2 large eggs
1 teaspoon of vanilla extract
2 cups of all-purpose flour
1 teaspoon of baking soda
1/2 teaspoon of salt
1 cup of chopped pecans
1 teaspoon of ground cinnamon
1/2 cup of chocolate chips (optional)
1/4 teaspoon of nutmeg (optional)
Powdered sugar (for dusting, optional)
Caramel sauce (for drizzling, optional)
Instructions
Preheat your oven to 350°F (175°C) and prepare your baking sheets by lining them with parchment paper.
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Add in the eggs and vanilla, and mix until just combined.
In another bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg (if using). Gradually add to the wet mixture and mix until just combined.
Fold in the chopped pecans gently.
Using a cookie scoop or a spoon, drop dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
Bake for 10-12 minutes, or until the edges are lightly golden.
Remove from the oven and let them cool on the baking sheet for about 5 minutes before transferring to a wire rack.
