4 boneless, skinless chicken breasts
1 cup shredded cheddar cheese
1 cup mushrooms, sliced
1 medium onion, diced
1 cup heavy cream
2 tablespoons olive oil
Salt and pepper, to taste
2 teaspoons garlic powder
Fresh parsley, chopped for garnish
Instructions
Preheat your oven to 375°F (190°C). Season the chicken breasts with salt, pepper, and garlic powder.
In a large skillet over medium heat, add olive oil. Once it’s hot, add the chicken breasts and cook for about 6-7 minutes on each side until they are golden brown and cooked through.
Remove the chicken from the skillet and set aside. In the same skillet, add the diced onions and sliced mushrooms. Sauté for about 5 minutes until they are soft and fragrant.
Pour in the heavy cream and bring to a gentle simmer. Stir in the shredded cheddar cheese until it’s melted and smooth.
Place the cooked chicken breasts back in the skillet, spooning the sauce over the top to coat.
Transfer the skillet to the oven and bake for 15-20 minutes.
Once it’s done baking, sprinkle with fresh parsley before serving.
