  • Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  • In a medium saucepan over medium heat, melt 2 tablespoons of butter with 1/4 cup of sugar. Stir until the sugar dissolves, then add the figs and cook for 3-4 minutes. Arrange the figs in the pan.
  • Cream together the remaining butter (1/4 cup) and sugar (1/2 cup) until fluffy. Add the eggs one at a time, mixing well. Stir in almond extract.
  • In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the butter mixture, alternating with milk if necessary.
  • Spoon the batter over the figs in the pan and spread evenly.
  • Bake for approximately 30-35 minutes, until a toothpick comes out clean.
  • Cool in the pan for 10 minutes, then invert onto a serving plate.
