Ingredients
Scale
2 cups fresh figs, halved
1/2 cup unsalted butter
3/4 cup sugar
1 cup all-purpose flour
1 teaspoon baking powder
2 eggs
1 teaspoon almond extract
1/4 teaspoon salt
1/4 cup chopped nuts (optional)
1/2 teaspoon spices (optional)
Citrus zest (optional)
Powdered sugar (for garnish)
Fresh mint leaves (for garnish)
Whipped cream (for serving)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
In a medium saucepan over medium heat, melt 2 tablespoons of butter with 1/4 cup of sugar. Stir until the sugar dissolves, then add the figs and cook for 3-4 minutes. Arrange the figs in the pan.
Cream together the remaining butter (1/4 cup) and sugar (1/2 cup) until fluffy. Add the eggs one at a time, mixing well. Stir in almond extract.
In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the butter mixture, alternating with milk if necessary.
Spoon the batter over the figs in the pan and spread evenly.
Bake for approximately 30-35 minutes, until a toothpick comes out clean.
Cool in the pan for 10 minutes, then invert onto a serving plate.
