2 cups of graham cracker crumbs
1/2 cup of unsalted butter (brown butter preferred)
16 oz of cream cheese (softened)
3/4 cup of granulated sugar
1/4 cup of sour cream
3 large eggs
1 tablespoon of vanilla bean paste
1 tablespoon of all-purpose flour
Instructions
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs and melted butter. Press this mixture into the bottom of a 9-inch springform pan and bake for 8-10 minutes. Set aside to cool.
In a small saucepan, melt the butter over medium heat until it turns golden and smells nutty. Allow to cool slightly.
In a large mixing bowl, beat the cream cheese with granulated sugar until smooth. Add sour cream and mix until combined.
Beat in the eggs one at a time, mixing gently after each addition.
