For the Crust:
1 ¾ cups graham cracker crumbs
½ cup unsalted butter, melted
2 tablespoons sugar
For the Cheesecake:
1 cup unsalted butter
3 (8-ounce) packages cream cheese, softened
1 cup sugar
3 large eggs
1 tablespoon all-purpose flour
1 tablespoon vanilla bean paste
⅓ cup sour cream
1 teaspoon vanilla extract
Instructions
Preheat the oven to 325°F (160°C).
In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom of a 9-inch springform pan.
Bake in the preheated oven for 10 minutes, then allow it to cool.
In a medium saucepan, melt the butter until browned. Pour it into a mixing bowl and let it cool slightly.
In the bowl with the brown butter, add softened cream cheese and sugar. Beat until smooth, adding eggs one at a time, followed by the flour, vanilla bean paste, sour cream, and vanilla extract.
Pour the filling over the crust and spread evenly.
Bake for 60-70 minutes or until the edges are set and the center has a slight jiggle.
Cool in the oven with the door slightly cracked for 1 hour.
Chill in the refrigerator for at least 4 hours or overnight.
Remove from the springform pan, garnish as desired, and serve.
