8–10 rice paper wrappers
1 cup shredded carrots
1 cup cucumber, julienned
1 red bell pepper, sliced

1 cup cooked vermicelli noodles (optional)

1/2 cup peanut butter
1 tablespoon soy sauce
1 tablespoon honey or maple syrup
1 tablespoon rice vinegar
1–2 tablespoons warm water

Instructions
Prepare Your Ingredients: Begin by prepping all your vegetables and herbs. Have everything washed, cut, and arranged within easy reach.
Make the Peanut Sauce: In a bowl, combine peanut butter, soy sauce, honey, rice vinegar, and warm water. Whisk until smooth and creamy. Adjust the consistency with more warm water if needed. For spice, mix in sriracha to taste!
Soften the Rice Paper: Dip one rice paper wrapper into warm water for about 10-15 seconds, or until it softens.
Assemble Your Spring Roll: Place the softened rice paper on a clean cutting board. Start layering your ingredients about one-third of the way up from the bottom.
Roll It Up: Fold the bottom of the rice paper over the filling, then the sides inward, and roll it tightly.
