  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves of garlic, minced
  • 1 tablespoon of tomato paste
  • 1 teaspoon of dried thyme
  • 1 teaspoon of smoked paprika
  • 1 cup of vegetable broth
  • 1 cup of frozen peas
  • 2 pounds of potatoes, peeled and cubed
  • 1/4 cup of milk or plant-based milk
  • Salt and pepper to taste
  • Optional: Diced mushrooms, cheddar cheese, fennel seeds
  • Special Garnish: Fresh parsley or chives

  • Instructions

  • Rinse lentils under cold water and cook in boiling water for 20-25 minutes until tender. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add onion, carrots, and celery, cooking for 5-7 minutes until softened. Stir in garlic and cook for another minute.
  • Stir in tomato paste, thyme, and smoked paprika, cooking for an additional 2 minutes.
  • Add cooked lentils, vegetable broth, and frozen peas to the skillet, stirring well. Let simmer for about 10 minutes, then season with salt and pepper.
  • While filling simmers, boil potatoes in salted water until tender, about 15-20 minutes. Drain and mash with milk, salt, and pepper until creamy.
  • Preheat oven to 400°F (200°C). Layer lentil mixture in a baking dish and top with mashed potatoes, creating swirls for a rustic look.
  • Bake in the oven for 25-30 minutes until the top is golden brown and crispy. Broil for the last few minutes for extra crunch if desired.
  • Let rest for a few minutes before serving, garnished with fresh parsley or chives.
