1 can (15 oz) black beans, drained and rinsed
1 cup cooked quinoa or brown rice
1/2 cup breadcrumbs (gluten-free if desired)
1/2 cup finely chopped bell pepper
1/4 cup finely chopped onion
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
Salt and pepper to taste
2 tablespoons olive oil (for cooking)
Optional toppings: avocado, lettuce, tomato, pickles, mustard, or your favorite sauce
Instructions
Chop the bell pepper and onion finely, and mince the garlic.
In a large mixing bowl, add the drained black beans and mash them until slightly chunky.
Add cooked quinoa or brown rice, chopped bell pepper, onion, garlic, cumin, smoked paprika, salt, and pepper to the mashed beans. Mix until well combined.
Gradually incorporate breadcrumbs into the mixture. If too dry, add a tablespoon of water or vegetable broth.
Form the mixture into patties, about 1/2-inch to 3/4-inch thick.
Heat olive oil in a skillet over medium heat and cook the patties for 5-7 minutes on each side until golden brown and crispy.
Place the cooked veggie burgers on buns and add your preferred toppings.
