  • 1 cup cooked quinoa or brown rice
  • 1/2 cup breadcrumbs (gluten-free if desired)
  • 1/2 cup finely chopped bell pepper
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for cooking)
  • Optional toppings: avocado, lettuce, tomato, pickles, mustard, or your favorite sauce

  • Instructions

  • Chop the bell pepper and onion finely, and mince the garlic.
  • In a large mixing bowl, add the drained black beans and mash them until slightly chunky.
  • Add cooked quinoa or brown rice, chopped bell pepper, onion, garlic, cumin, smoked paprika, salt, and pepper to the mashed beans. Mix until well combined.
  • Gradually incorporate breadcrumbs into the mixture. If too dry, add a tablespoon of water or vegetable broth.
  • Form the mixture into patties, about 1/2-inch to 3/4-inch thick.
  • Heat olive oil in a skillet over medium heat and cook the patties for 5-7 minutes on each side until golden brown and crispy.
  • Place the cooked veggie burgers on buns and add your preferred toppings.
