1 medium onion, finely chopped
2 cloves garlic, minced
1 medium carrot, finely diced
1 rib celery, finely diced
1 can (14 oz) crushed tomatoes
2 tablespoons tomato paste
1/2 cup red wine
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
1/4 cup grated Parmesan cheese (for serving)
Instructions
Prepare the Vegetables: Start by finely chopping the onion, carrot, and celery. Mince the garlic and set everything aside.
Sauté the Aromatics: In a large skillet or saucepan, heat olive oil over medium heat. Add the onion, carrot, and celery, cooking until softened (about 5-7 minutes). Stir in the garlic and cook for another minute.
Brown the Meat: Increase the heat to medium-high and add the ground meat to the pan. Break it apart with a wooden spoon and cook until browned (about 7-10 minutes).
Add the Tomatoes: Once the meat is browned, stir in the crushed tomatoes and tomato paste, mixing everything evenly.
Deglaze with Wine: Pour in the red wine, scraping any bits stuck to the bottom of the pan. Allow it to simmer for about 2-3 minutes.
Season: Add oregano, salt, and pepper. Reduce the heat to low and let it simmer gently for 20-25 minutes. Stir occasionally to avoid sticking.
Cook the Pasta: While the sauce simmers, cook your choice of pasta according to package directions in boiling salted water. Drain and set aside.
Combine and Serve: After the sauce thickens, combine it with the pasta, mixing well. Serve immediately topped with grated Parmesan and fresh basil if desired.
