Preheat your oven to 350°F (175°C).In a bowl, whisk together the flour, baking soda, and salt. Set aside.In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until fluffy and light—about 2-3 minutes.Mix the egg, maple syrup, and vanilla into the butter and sugar until everything is smooth.Gradually add the dry mixture to the wet ingredients and stir until just combined.Gently fold in the white chocolate chips until evenly distributed.Use a tablespoon to drop rounded dough balls onto a lined baking sheet, leaving space between them.Bake for about 10-12 minutes, until just barely golden around the edges.Let them sit on the baking sheet for a couple of minutes before transferring to wire racks to cool.Melt white chocolate in a microwave-safe bowl and dip half of each cooled cookie into it.
