Ingredients

  • 1 ½ cups of all-purpose flour
  • ½ cup of unsalted butter, chilled and cubed
  • ¼ cup of powdered sugar
  • 1 egg yolk
  • 23 tablespoons of cold water
  • 7 oz. of white chocolate, chopped
  • 2 cups of heavy whipping cream
  • 3 egg whites
  • ¼ cup of granulated sugar
  • 1 teaspoon of vanilla extract

  • Instructions

  • In a mixing bowl, combine the flour and powdered sugar. Add in the chilled butter, and mix it until the mixture resembles coarse crumbs.
  • Mix in the egg yolk and just enough cold water until the dough comes together. Wrap it in plastic wrap and chill it in the fridge for about 30 minutes.
  • Preheat your oven to 375°F (190°C).
  • Once chilled, roll out the dough on a floured surface. Cut into circles to fit your tartlet pans and press them into the molds, poking small holes in the bottom.
  • Bake the tart shells for about 15-20 minutes, or until lightly golden. Let them cool for a few minutes before gently removing them from the pans.
  • Melt the white chocolate over a double boiler until smooth. Allow it to cool slightly while whipping the cream and egg whites.
  • In one bowl, whip 1 cup of the heavy cream until soft peaks form. In another bowl, whisk the egg whites until frothy, then gradually add granulated sugar and whip until stiff peaks form.
  • Stir a small portion of the whipped cream into the melted chocolate until combined, and then fold in the remaining whipped cream and whipped egg whites until no white streaks remain.
  • Pipe or spoon the mousse into the cooled tart shells.
  • Refrigerate the tartlets for at least 2 hours to allow them to set.
