Ingredients

1 ½ cups of all-purpose flour
½ cup of unsalted butter, chilled and cubed
¼ cup of powdered sugar
1 egg yolk
2–3 tablespoons of cold water
7 oz. of white chocolate, chopped
2 cups of heavy whipping cream
3 egg whites
¼ cup of granulated sugar
1 teaspoon of vanilla extract
Instructions
In a mixing bowl, combine the flour and powdered sugar. Add in the chilled butter, and mix it until the mixture resembles coarse crumbs.
Mix in the egg yolk and just enough cold water until the dough comes together. Wrap it in plastic wrap and chill it in the fridge for about 30 minutes.
Preheat your oven to 375°F (190°C).
Once chilled, roll out the dough on a floured surface. Cut into circles to fit your tartlet pans and press them into the molds, poking small holes in the bottom.
Bake the tart shells for about 15-20 minutes, or until lightly golden. Let them cool for a few minutes before gently removing them from the pans.
Melt the white chocolate over a double boiler until smooth. Allow it to cool slightly while whipping the cream and egg whites.
In one bowl, whip 1 cup of the heavy cream until soft peaks form. In another bowl, whisk the egg whites until frothy, then gradually add granulated sugar and whip until stiff peaks form.
Stir a small portion of the whipped cream into the melted chocolate until combined, and then fold in the remaining whipped cream and whipped egg whites until no white streaks remain.
Pipe or spoon the mousse into the cooled tart shells.
Refrigerate the tartlets for at least 2 hours to allow them to set.
