6 oz white chocolate
1 cup heavy cream
8 oz mascarpone cheese
1 cup brewed coffee (cooled)
2 tablespoons sugar
1 teaspoon vanilla extract
16–20 ladyfinger cookies
1 cup fresh raspberries
Instructions
Start by melting the white chocolate in a microwave or a double boiler, doing it in 20-second increments.
In a mixing bowl, whip the heavy cream until soft peaks form.
Gently fold in the mascarpone cheese, sugar, and vanilla to the whipped cream.
Once the white chocolate has cooled slightly, fold that in carefully until it’s all homogenous.
In a shallow dish, pour the cooled coffee. You can add a touch of sugar here if you'd like.
Dip each ladyfinger in the coffee for just a second or two and lay them in a serving dish. Spread a generous layer of the cream mixture over them and top with raspberries. Repeat until you run out of ingredients, ending with a cream layer on top.
Cover and refrigerate the tiramisu for at least 4 hours, or overnight for optimal flavor.
