  • 6 oz white chocolate
  • 1 cup heavy cream
  • 8 oz mascarpone cheese
  • 1 cup brewed coffee (cooled)
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1620 ladyfinger cookies
  • 1 cup fresh raspberries

  • Instructions

  • Start by melting the white chocolate in a microwave or a double boiler, doing it in 20-second increments.
  • In a mixing bowl, whip the heavy cream until soft peaks form.
  • Gently fold in the mascarpone cheese, sugar, and vanilla to the whipped cream.
  • Once the white chocolate has cooled slightly, fold that in carefully until it’s all homogenous.
  • In a shallow dish, pour the cooled coffee. You can add a touch of sugar here if you'd like.
  • Dip each ladyfinger in the coffee for just a second or two and lay them in a serving dish. Spread a generous layer of the cream mixture over them and top with raspberries. Repeat until you run out of ingredients, ending with a cream layer on top.
  • Cover and refrigerate the tiramisu for at least 4 hours, or overnight for optimal flavor.
