1/4 cup of mirin

Bell peppers or cherry tomatoes (optional)
Sesame seeds (optional)

Instructions
Prepare the Marinade: In a bowl, whisk together soy sauce, mirin, sugar, sake (if using), and black pepper. It should smell heavenly already! Once combined, set a little aside for basting later.
Cut the Chicken: Cut the chicken thighs into bite-sized pieces, about 1-inch cubes.
Marinate the Chicken: Place the chicken cubes in a ziplock bag or bowl, pour the marinade over the top, and toss well to coat. Seal it up (or cover) and let it marinate in the fridge for at least 30 minutes (or up to 4 hours).
Skewering Time: Once marinated, thread the chicken pieces onto the skewers, leaving a little space between each chunk for even cooking.
Heat the Grill: Preheat your grill or grill pan over medium-high heat.
Grill the Skewers: Place the skewers on the grill and cook for about 3-4 minutes per side, basting with the reserved marinade as you go.
Garnish and Serve: Remove the skewers from the grill and sprinkle with chopped green onions (and any other optional garnishes you like).
