- 1 large yellow squash (about 1 pound)
- 1/2 cup all-purpose flour
- 1/2 cup cornmeal
- 1/4 cup grated parmesan cheese
- 1 large egg
- 1/4 cup chopped green onions
- 1–2 cloves garlic, minced
- Salt and black pepper to taste
- 1 teaspoon paprika
- Cooking spray or olive oil
Instructions
- Wash the yellow squash thoroughly, trim both ends, and grate the squash. Squeeze to remove excess moisture.
- In a large bowl, combine the grated squash, flour, cornmeal, parmesan cheese, egg, green onions, garlic, salt, pepper, and paprika. Mix until well combined.
- Shape the mixture into patties about 1/2 inch thick.
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper, lightly spraying it with olive oil.
- Place fritters on the baking sheet and spray the tops with cooking spray or brush with olive oil. Bake for 20-25 minutes, flipping halfway through.
- Once baked, cool slightly before serving. These fritters can be served warm or at room temperature.
