Ingredients

  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/4 cup grated parmesan cheese
  • 1 large egg
  • 1/4 cup chopped green onions
  • 12 cloves garlic, minced
  • Salt and black pepper to taste
  • 1 teaspoon paprika
  • Cooking spray or olive oil

Instructions

  • Wash the yellow squash thoroughly, trim both ends, and grate the squash. Squeeze to remove excess moisture.
  • In a large bowl, combine the grated squash, flour, cornmeal, parmesan cheese, egg, green onions, garlic, salt, pepper, and paprika. Mix until well combined.
  • Shape the mixture into patties about 1/2 inch thick.
  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper, lightly spraying it with olive oil.
