Ingredients
Fresh Cranberries (12 oz)
Maple Syrup (1 cup)
Orange Zest (from 1 medium orange)
Orange Juice (1/2 cup, freshly squeezed)
Water (1/4 cup)
Pinch of Salt
Ground Cinnamon (optional, 1/2 tsp)
Fresh Ginger (optional, 1 tsp, grated)
Dried Cherries or Raisins (optional, 1/2 cup)

Instructions
Rinse the cranberries under cool water, discarding any that are mushy or discolored. Zest and juice the orange while measuring out the maple syrup and water.
In a medium saucepan, combine the cranberries, maple syrup, orange juice, water, and a pinch of salt. Bring this mixture to a simmer over medium heat.
Allow the mixture to cook, stirring occasionally, until the cranberries begin to burst, about 10 minutes. The sauce will become thicker as it simmers.
Once the cranberries are mostly burst, remove the saucepan from the heat and stir in the orange zest. Add optional spices if desired.
Let the sauce cool down to room temperature, then transfer it into an airtight container. It can be served immediately or stored in the fridge for up to one week.
