Ingredients
Scale
1 pre-made pie crust
2 medium zucchinis
1 cup sweet corn (fresh, frozen, or canned)
4 large eggs
1 cup milk (or cream for richness)
1 cup shredded cheese (cheddar, mozzarella, or your favorite)
Salt and pepper to taste
2 tablespoons olive oil
Optional: 1 small onion (diced)
Optional: Fresh herbs (like parsley, basil, or thyme)
Optional: Crumbled feta or goat cheese
Optional: Pinch of red pepper flakes
Instructions
Preheat your oven to 375°F (190°C).
If using a refrigerated pie crust, fit it into a 9-inch pie dish and prick the bottom with a fork. Blind bake for about 10 minutes or until slightly golden. Remove from the oven and set aside.
In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced zucchini and sauté for about 5 minutes until just tender. Season with salt and pepper. Set aside to cool slightly.
In a large mixing bowl, whisk together the eggs and milk (or cream) until fully combined. Stir in the shredded cheese, sweet corn, and the sautéed zucchini. Mix well and adjust seasoning as desired.
Carefully pour the vegetable and egg mixture into the prepared pie crust, spreading it evenly.
Place the quiche in the preheated oven and bake for 30-35 minutes, or until the filling is set and the top is lightly golden.
Once baked, let the quiche cool for a few minutes before slicing. Garnish as desired and enjoy warm or at room temperature!
