  • Salt & pepper to taste
  • 1/4 teaspoon nutmeg (optional)
  • Optional additions: red pepper flakes, diced jalapeños, fresh herbs, diced onions
  • Special garnishes: fresh basil or parsley leaves, extra cheese

  • Instructions

  • Preheat your oven to 375°F (190°C).
  • Prepare the pie crust according to package instructions if using a pre-made crust.
  • In a skillet over medium heat, sauté the sliced zucchini for about 5 minutes until slightly tender.
  • Remove the skillet from heat and stir in the sweet corn. Allow the mixture to cool slightly.
  • In a mixing bowl, whisk together the eggs, cream (or milk), salt, pepper, and optional nutmeg.
  • Spread the zucchini and corn mixture evenly over the pie crust.
