Instructions
Preheat your oven to 375°F (190°C).
In a large oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3 minutes. Then, add the sliced zucchini and continue to cook until it’s tender (about 5 minutes). Stir in the halved cherry tomatoes and cook for an additional 2-3 minutes.
