Instructions
- Wash the zucchinis and yellow squashes thoroughly. Grate them and squeeze out excess moisture.
- In a large mixing bowl, combine the grated squash, salt, flour, Parmesan cheese, and beaten eggs. Mix well.
- In a skillet over medium heat, add vegetable oil and let it heat.
- Drop the mixture into the hot oil, flatten slightly, and fry until golden brown on both sides.
- Remove fritters from oil and place on paper towels. Serve warm with your favorite dipping sauce.
