Ingredients

Scale
  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips (optional)

  • Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
  • Grate the zucchini using a box grater or a food processor, then use a clean kitchen towel to squeeze out the excess moisture.
  • In a large mixing bowl, whisk together the sugar, oil, and eggs until well combined. Stir in the vanilla extract.
  • In another bowl, mix the flour, cocoa powder, baking soda, and salt together.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.
  • Fold in the grated zucchini until evenly distributed throughout the batter. If using, stir in chocolate chips at this point.
  • Transfer the brownie batter to your prepared baking pan, spreading it out evenly.
  • Place in the oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the brownies to cool in the pan for about 10 minutes before transferring them to a wire rack. Once fully cooled, cut into squares and serve.
