2 medium zucchinis, diced1 can (15 oz) chickpeas, drained and rinsed1 onion, chopped3 cloves garlic, minced1 tsp cuminSalt and pepper, to taste2 tbsp olive oilFresh parsley, chopped (for garnish)
In a large skillet, heat the olive oil over medium heat for about a minute.Add the chopped onions and sauté for about 3-4 minutes, or until they become translucent.Stir in the minced garlic and cook for an additional 30 seconds, being careful not to burn it.Add the diced zucchini, stir frequently and cook until just tender, about 5-7 minutes.Toss in the drained chickpeas, cumin, salt, and pepper.
