  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)

  • Instructions

  • In a large skillet, heat the olive oil over medium heat for about a minute.
  • Add the chopped onions and sauté for about 3-4 minutes, or until they become translucent.
  • Stir in the minced garlic and cook for an additional 30 seconds, being careful not to burn it.
  • Add the diced zucchini, stir frequently and cook until just tender, about 5-7 minutes.
  • Toss in the drained chickpeas, cumin, salt, and pepper. Mix well and let cook together for another 5-7 minutes.
