3 medium zucchinis, thinly sliced
3 medium yellow squashes, thinly sliced
1 medium onion, diced
2 cloves garlic, minced
2 cups shredded sharp cheddar cheese
1 cup grated Parmesan cheese
1 cup heavy cream
2 tablespoons unsalted butter
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried oregano
1/2 teaspoon paprika
1 cup breadcrumbs (panko is best for extra crunch)
Fresh parsley, chopped (for garnish)
Instructions
Preheat the oven to 375°F (190°C).
Wash and slice the zucchinis and yellow squashes into thin, even circles.
In a large skillet over medium heat, melt the butter. Add the diced onion and sauté until translucent, about 5 minutes. Stir in garlic and cook for another minute.
In a greased baking dish, layer the sliced zucchini and yellow squash, followed by the sautéed onion and garlic. Season with salt, pepper, oregano, and paprika.
Pour heavy cream over the vegetables and sprinkle with half of the cheddar and half of the Parmesan cheese.
Add another layer of zucchini and yellow squash, top with remaining cheeses and breadcrumbs. Drizzle melted butter over breadcrumbs if desired.
Bake for 30-35 minutes, until golden brown and tender.
