Ingredients

  • 3 medium zucchinis, thinly sliced
  • 3 medium yellow squashes, thinly sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups shredded sharp cheddar cheese
  • 1 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 cup breadcrumbs (panko is best for extra crunch)
  • Fresh parsley, chopped (for garnish)

  • Instructions

  • Preheat the oven to 375°F (190°C).
  • Wash and slice the zucchinis and yellow squashes into thin, even circles.
  • In a large skillet over medium heat, melt the butter. Add the diced onion and sauté until translucent, about 5 minutes. Stir in garlic and cook for another minute.
  • In a greased baking dish, layer the sliced zucchini and yellow squash, followed by the sautéed onion and garlic. Season with salt, pepper, oregano, and paprika.
  • Pour heavy cream over the vegetables and sprinkle with half of the cheddar and half of the Parmesan cheese.
  • Add another layer of zucchini and yellow squash, top with remaining cheeses and breadcrumbs. Drizzle melted butter over breadcrumbs if desired.
  • Bake for 30-35 minutes, until golden brown and tender.
  • Garnish with parsley and serve.
