1 pound Italian sausage
3 medium potatoes, diced
2 cups kale, chopped
6 cups chicken broth
1 cup heavy cream
1 onion, chopped
4 cloves garlic, minced
1 teaspoon red pepper flakes
Salt and pepper to taste
Instructions
In a large pot or Dutch oven over medium heat, add the Italian sausage. Cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes. Remove the sausage, leaving the drippings in the pot.
In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
Stir in the diced potatoes and cook for another 2-3 minutes.
Add the chicken broth to the pot. Bring to a simmer, then reduce heat to medium-low. Let it cook until the potatoes are tender, approximately 15-20 minutes.
