2 medium summer squashes, trimmed and sliced into half-moons
2 tablespoons olive oil
2 cloves garlic, minced
½ teaspoon red pepper flakes (optional for some heat)
Salt and pepper, to taste
¼ cup freshly grated Parmesan cheese (for topping)
Fresh basil leaves, chopped (for garnish)
Instructions
Begin by bringing a large pot of salted water to a boil. Add your pasta and cook it according to the package instructions until al dente. This typically takes about 8-10 minutes. Reserve ½ cup of the pasta water, then drain the pasta and set it aside.
While your pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced summer squash and sauté for about 3-4 minutes until it becomes tender and slightly golden brown. Season with salt and pepper to taste.
Now it’s time to add the minced garlic and red pepper flakes (if using) to the skillet. Sauté for about 1-2 minutes until the garlic becomes fragrant, taking care not to let it burn.
Add the drained pasta to the skillet along with the reserved pasta water. This helps to create a light sauce that clings beautifully to the pasta. Toss everything together until well combined, allowing the pasta to absorb the flavors from the summer squash and garlic.
