  • ¼ cup freshly grated Parmesan cheese (for topping)
  • Fresh basil leaves, chopped (for garnish)

  • Instructions

  • Begin by bringing a large pot of salted water to a boil. Add your pasta and cook it according to the package instructions until al dente. This typically takes about 8-10 minutes. Reserve ½ cup of the pasta water, then drain the pasta and set it aside.
  • While your pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced summer squash and sauté for about 3-4 minutes until it becomes tender and slightly golden brown. Season with salt and pepper to taste.
  • Now it’s time to add the minced garlic and red pepper flakes (if using) to the skillet. Sauté for about 1-2 minutes until the garlic becomes fragrant, taking care not to let it burn.
