Instructions
- Begin by preparing all your ingredients. Cut the salmon fillet into bite-sized pieces and position them in a large bowl. Drizzle the olive oil over the salmon and sprinkle with garlic powder, paprika, salt, and pepper. Toss to evenly coat. For the broccoli, wash and cut the head into florets. Mince the garlic and set it aside for later. Rinse the jasmine rice under cold water and drain. Preheat your air fryer to 400°F (200°C) to ensure your salmon bites cook evenly and achieve that perfect crispy exterior.
- In a medium saucepan, combine jasmine rice, coconut milk, water, sugar, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes or until the rice is fluffy and all liquid is absorbed. Fluff with a fork before serving. While the rice is cooking, place the seasoned salmon bites in the preheated air fryer in a single layer. Cook for approximately 8-10 minutes or until the salmon is cooked through and flakes easily with a fork. Meanwhile, heat sesame oil in a large skillet over medium heat, add minced garlic, and sauté for 30 seconds until fragrant. Then, toss in the broccoli florets and sauté for about 5-7 minutes, seasoning with salt and pepper.
- To serve, heap a generous portion of coconut rice onto each plate, add a side of sautéed broccoli, and crown it with a handful of air-fried salmon bites. Garnish with fresh herbs and lime wedges.
