Description

A delightful cheesecake that combines creamy texture with the sweet and tangy flavors of apple cider, perfect for fall gatherings.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup sugar
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup apple cider
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 cup sour cream
  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract
  • A sprinkle of cinnamon for garnish

Instructions

  1. Preheat your oven to 325°F (160°C) and prepare a 9-inch springform pan by greasing it lightly. Combine the graham cracker crumbs, melted butter, and sugar in a bowl until well mixed. Press this mixture into the bottom of the prepared pan to form an even crust.
  2. Beat the softened cream cheese until smooth. Gradually add the granulated sugar, mixing until combined. Add the vanilla extract, then mix in the eggs one at a time. Finally, pour in the apple cider and mix until everything is combined.
  3. Pour the cheesecake filling over the graham cracker crust and smooth the top. Bake for about 55-60 minutes, or until the center is set but still slightly wobbly. Let it cool in the pan for about an hour.
  4. Mix sour cream, powdered sugar, and vanilla extract to create a smooth topping. Spread this mixture across the top of the cheesecake. Refrigerate for at least four hours, preferably overnight.
  5. Remove the sides of the springform pan and slice into wedges. Top each slice with a sprinkle of cinnamon or fresh apple slices for garnish.

Notes

Optional: To customize, consider adding cloves or ginger to the filling or swirling in caramel sauce before baking. Serve with whipped cream and enjoy with spiced chai or cider.
