¾ cup unsalted butter, softened
1 cup brown sugar
½ cup granulated sugar
1 large egg
1 cup apple cider
Optional add-ins: chopped nuts or dried cranberries
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
In a large bowl, beat together the softened butter, brown sugar, and granulated sugar until creamy and smooth.
Add the egg to the butter mixture and mix until fully incorporated.
Pour in the apple cider and mix until well combined.
Gradually blend the flour mixture into the wet ingredients, stirring until the dough comes together. Be careful not to overmix.
If desired, fold in any optional add-ins like nuts or dried fruit at this stage.
Using a tablespoon, scoop the cookie dough onto your prepared baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. The centers may look slightly underbaked; they will firm up as they cool.
Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
