- 2 cups shredded cooked chicken
- 1 cup BBQ sauce
- 2 cups tortilla chips
- 1 cup cubed fresh pineapple
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/4 cup sliced green onions
- 1/4 cup chopped cilantro
- Sour cream (optional)
- Jalapeños (optional)
Instructions
- Gather your ingredients. Preheat your grill or oven to 400°F (200°C). Chop your pineapple and shred the chicken mixed with BBQ sauce.
- Grill the pineapple on skewers for 3-5 minutes per side until grill marks appear. Mix the chicken with BBQ sauce.
- Layer tortilla chips on a platter, sprinkle with half of the cheese, add BBQ chicken, toss grilled pineapple, and top with remaining cheese. Bake for 10 minutes until melted.
- Remove from the oven, top with green onions, cilantro, and optional garnishes. Serve immediately.
Notes
For a vegetarian option, substitute chicken with black beans or jackfruit. Customize flavors with spices or sauces as desired.
