A fun and inventive twist on nachos featuring sticky BBQ chicken and juicy grilled pineapple, perfect for summer gatherings.


Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup BBQ sauce
  • 2 cups tortilla chips
  • 1 cup cubed fresh pineapple
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/4 cup sliced green onions
  • 1/4 cup chopped cilantro
  • Sour cream (optional)
  • Jalapeños (optional)

Instructions

  1. Gather your ingredients. Preheat your grill or oven to 400°F (200°C). Chop your pineapple and shred the chicken mixed with BBQ sauce.
  2. Grill the pineapple on skewers for 3-5 minutes per side until grill marks appear. Mix the chicken with BBQ sauce.
  3. Layer tortilla chips on a platter, sprinkle with half of the cheese, add BBQ chicken, toss grilled pineapple, and top with remaining cheese. Bake for 10 minutes until melted.
  4. Remove from the oven, top with green onions, cilantro, and optional garnishes. Serve immediately.

Notes
