- 4 medium sweet potatoes
- 2 cups shredded cooked chicken
- 1 cup BBQ sauce
- 1/2 cup shredded cheese (cheddar or a blend)

Instructions
- Preheat your oven to 400°F (200°C). Wash and poke holes in the sweet potatoes with a fork. Consider wrapping them in foil for even cooking.
- Bake the sweet potatoes on a baking sheet for 45-60 minutes, or until soft.
- Mix the shredded chicken with BBQ sauce in a bowl, adjusting the sauce quantity to your preference. Season with salt and pepper.
- Remove the sweet potatoes from the oven, let them cool, and slice open lengthwise. Fluff the insides with a fork.
