Ingredients

  • 4 medium sweet potatoes
  • 2 cups shredded cooked chicken
  • 1 cup BBQ sauce
  • 1/2 cup shredded cheese (cheddar or a blend)
  • 1/4 cup green onions, chopped
  • Salt and pepper, to taste
  • Olive oil, for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and poke holes in the sweet potatoes with a fork. Consider wrapping them in foil for even cooking.
  2. Bake the sweet potatoes on a baking sheet for 45-60 minutes, or until soft.
  3. Mix the shredded chicken with BBQ sauce in a bowl, adjusting the sauce quantity to your preference. Season with salt and pepper.
  4. Remove the sweet potatoes from the oven, let them cool, and slice open lengthwise. Fluff the insides with a fork.
