1 lb ground beef1 cup breadcrumbs1/2 cup finely chopped onion2 garlic cloves, minced1/4 cup milk1 large egg1 tablespoon Worcestershire sauce1 teaspoon salt1 teaspoon pepper1 cup BBQ sauce2 lbs potatoes (Yukon Gold or Russet)1/2 cup milk1/4 cup buttersalt & pepper to tasteChopped herbs (optional)Cheddar cheese (optional)BBQ chicken or pork (optional)
Preheat your oven to 350°F (175°C).In a large bowl, mix the ground beef, breadcrumbs, onion, garlic, milk, Worcestershire sauce, egg, salt, and pepper gently.Transfer the mixture into a loaf pan and shape it into a loaf.Pour half of the BBQ sauce over the top of the meatloaf.Bake for about 1 hour, or until the internal temperature reaches 160°F (70°C).Peel and chop the potatoes, boil them until tender, then drain.Add milk, butter, salt, and pepper to the drained potatoes and mash until creamy.Let the meatloaf rest for about 10 minutes, then slice and serve with remaining BBQ sauce and mashed potatoes.
