Ingredients

  • 1 lb ground beef
  • 1 cup breadcrumbs
  • 1/2 cup finely chopped onion
  • 2 garlic cloves, minced
  • 1/4 cup milk
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 cup BBQ sauce
  • 2 lbs potatoes (Yukon Gold or Russet)
  • 1/2 cup milk
  • 1/4 cup butter
  • salt & pepper to taste
  • Chopped herbs (optional)
  • Cheddar cheese (optional)
  • BBQ chicken or pork (optional)

  • Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix the ground beef, breadcrumbs, onion, garlic, milk, Worcestershire sauce, egg, salt, and pepper gently.
  • Transfer the mixture into a loaf pan and shape it into a loaf.
  • Pour half of the BBQ sauce over the top of the meatloaf.
  • Bake for about 1 hour, or until the internal temperature reaches 160°F (70°C).
  • Peel and chop the potatoes, boil them until tender, then drain.
  • Add milk, butter, salt, and pepper to the drained potatoes and mash until creamy.
  • Let the meatloaf rest for about 10 minutes, then slice and serve with remaining BBQ sauce and mashed potatoes.
