  • 1 can (15 oz) of black beans, rinsed and drained
  • 1 can (10 oz) of red enchilada sauce
  • 8 corn tortillas, cut into strips
  • 1 cup of shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • 1/2 teaspoon of garlic powder
  • 1 small onion, diced
  • Olive oil for cooking

  • Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat a splash of olive oil over medium heat. Sauté the diced onion until soft and translucent, about 3-4 minutes.
  • Add the ground beef to the skillet, breaking it up and cooking until browned, about 5-7 minutes. Drain excess fat if needed.
  • Stir in cumin, chili powder, garlic powder, and black beans, mixing until heated through, about 1 minute.
  • Pour in the red enchilada sauce, stirring to coat the beef and beans.
  • In a 9×13 inch baking dish, layer the beef and bean mixture with tortilla strips, finishing with a layer of beef mixture.
  • Sprinkle the shredded cheese on top.
  • Cover with aluminum foil and bake for 20 minutes. Remove the foil and bake for another 10-15 minutes until the cheese is bubbling and golden.
  • Let sit for about 5-10 minutes before serving.
